One day I am going to miss this, you are right.

One day I am going to miss having only 3 chairs for our "dinner table" which has green nail polish on it, among other things. And that day I will probably miss our neighbors barking dogs that always let me know that it was 8:45 AM if I was considering sleeping in. I am going to miss cleaning out everything in our fridge and freezer that could possibly smell because our apartment is stinky. I am going to miss Tyler's computer in the middle of our living room that's right next to the night stand that is holding our TV and all the DVD's we own. (Oh and in the small tiny miniscule drawers it even has every letter and card Tyler ever wrote me. I will never get rid of those.) I am going to miss having everything in one place because we don't have room for it anywhere else. And that "A TON" of laundry was two loads worth. I will miss the time when we knew that it was time to put away the laundry when our dressers had all of our clothes on them until there weren't any in the closet. (Then we would just repeat that one.) I will miss our tiny appliances and the 40 percent of working counter space and how it was impossible to make a full meal at one time. Make that 20 percent. I will miss that we kept our Christmas lights up because our porch light went out and we aren't going through the work of changing it. I will miss the power outages that happen a little too often around here. (Tyler always pays the bills on time.) Oh, I will definitely miss when Tyler paid all of the bills, that's for sure. I will miss our first little apartment with one bathroom in our room so having guests over is impossible.

But, right now, I'd really like 4 chairs for the dinner table and for the dogs downstairs to go to a "farm".

Tres meses.



Can you believe it's been only 3 months? Can you believe that 3 months has flown by? That's how I feel. Both of them.

Dearest Tyler,
Thanks for staying married to me for 3 months. It really has been my pleasure. Here's to the next 3 and the 3 after that and so on and so forth. Let's always have this much fun, okay?

Yumpilstilskin.

This is why being married is the best.

Yesterday we were driving and I was talking to my dad about how to make home made french fries. Tyler said he knew what to make to go with them. So good and so easy. They were BBQ sticky fingers. We ate the whole plate and were so full after but it didn't feel super gross and deep fried. He made up the recipe himself. We made our own breadcrumbs and all. Look at us go!

I will post the recipe once I know what it is. (Like I said, I didn't cook the chicken.)
And that's why marriage is the best... your husband cooks sometimes!

Our first dinner & apartment


This is an example of how the storage space works in our apartment. Under the bathroom sink is always stocked up with stuff. There are not any closets to put it in.

You can bet our closet is a deluxe walk in closet. It's not nearly big enough but luckily we have a storage unit outside that houses half my wardrobe.

This is my favorite purchase we made because our books and such were all over the floor before this came along.

Our kitchen table only has 3 chairs. It gives it character right? And it houses a vase that cost more than the table and forked up art. That's what that thing is called, for real. I can't make that up.


The Kitchen Aid is the best. I love the color. One day it will go even better with the dream kitchen I have all ready for myself in my non-existent dream house. A girl can dream.

The freezer is always this full. It doesn't empty because then I fill it.


So I first made dinner for Tyler. It was spaghetti. He hates spaghetti so that was funny. But he ate the whole thing. And I tried not to make spaghetti after that too much.
There's the grande tour. (Grande with an E, yes, because it is sophisticated.) Come by anytime! Really, I would love a visitor or 2.

Chicken Tortilla Soup

Okay so I make a few things really well. I know this because Tyler eats them up and asks for me to make enough for leftovers. (Or at least hints for me to make leftovers).
Here's one of our favorites.



Chicken Tortilla Soup (and the best part...) In a Crock Pot

Ingredients

1 pound shredded, cooked chicken (Recipe follows)
1 (15 ounce) can whole peeled tomatoes, mashed (I cheat and use whatever is in the pantry which is always Italian style tomatoes)
1 (10 ounce) can enchilada sauce (Red sauce)
1 medium onion, chopped (I skip this one)
1 (4 ounce) can chopped green chile peppers (I use a whole green pepper cut up and then I take it out before we eat, but if you like spicy, go for it.)
2 cloves garlic, minced
2 cups water
1 (14.5 ounce) can chicken broth
1 teaspoon cumin
1 teaspoon chili powder
1 teaspoon salt
1/4 teaspoon black pepper
1 bay leaf (I don't use this because I don't know what it is)
1 (10 ounce) package frozen corn (I just use a can)
1 tablespoon chopped cilantro

You can add beans and rice if you want it to be thick. It is pretty thick to begin with. We do one package of RiceSides Mexican rice and it is perfect.

Directions

Place chicken, tomatoes, enchilada sauce, onion, green chiles, and garlic into a slow cooker. Pour in water and chicken broth, and season with cumin, chili powder, salt, pepper, and bay leaf. Stir in corn and cilantro. Cover, and cook on Low setting for 6 to 8 hours or on High setting for 3 to 4 hours.


For the shredded chicken:
Take about 3 chicken breasts and cut into smaller pieces. They don't have to be bite size but just in strips. Boil the can of tomatoes and 2 cups of water. If it is not enough to cover the chicken, add more water. Boil the chicken for 15 minutes in the pot. Make sure it is not pink before it is done. When it is cooked through, remove the chicken. If you didn't have to add water, then you can just dump out the tomatoes and water into the crock pot. If not, just remove the chicken and try to get the tomatoes out and you can take the water and use it as the 2 cups for the recipe. However you'd like to do it.
Take the chicken and put into a mixing bowl (note: I use a plastic one because I hate the noise that a fork makes at the bottom of a bowl). Shred the chicken with a fork. Just try it and you will see how easy it really is.

Voila! There is your meal. We add a tiny bit of cheese to our individual bowls and a tiny bit of sour cream. The sour cream goes a long way so be careful.

Things you really couldn't know:

-He sleeps on his pillow for about 30% of the night. The rest of the time it is in my face or under his arm.
-He snores, but only for a few minutes then climaxes out of it.
-He sleep talks. (I knew this one, but I hadn't fully experienced it.) Last night it was "Sorry I'm so hot in front of you."
-He gets crazy hair after falling asleep for only 30 minutes.

...until you share a bed.
